Cheese Ravioli with Asparagus

This cheese ravioli and asparagus in brown butter sauce is a really easy meal to whip up during the week. This easy recipe starts off with store-bought cheese ravioli and the only work you have to do is make the brown butter sauce for the ravioli and quickly cook some asparagus. This entire meal is ready in under 30 minutes and it is so delicious.

About this recipe:

This cheese ravioli and asparagus in brown butter sauce takes just minutes to make and the walnuts and asparagus that are added just round out the whole meal. It takes less than 30 minutes to prepare thanks to the fact that it uses already made cheese ravioli (fresh or frozen cheese ravioli will work).

The brown butter sauce that is made for this ravioli is so delicious and so easy to make. It is the ideal weeknight dinner and you can feel good eating it because of the vegetables and walnuts- that's a win-win for me!

What type of ravioli to use:

This recipe calls for fresh store-bought cheese ravioli (which is why the meal is simplified and quick) but you can certainly use a frozen ravioli or make your own. I choose fresh because it can be ready quickly and it is economical.

If you cannot have gluten, you can easily substitute the ravioli for gluten-free pasta or gluten-free ravioli. If you choose pasta shapes then make sure the pasta is a shaped variety like spirals or rigatoni and not spaghetti or angel hair which lacks the bite needed to round off the meal.

The ingredients you will need:

  • Fresh cheese ravioli (you can also use frozen ravioli or homemade)
  • Asparagus
  • Butter. This is the butter sauce for the ravioli.
  • Parmesan Cheese
  • Walnuts (toasted)

The are very few ingredients to make this ravioli and asparagus dinner. It is so simple. One thing that you should not skip is toasting the walnuts.

Anytime you are working with nuts in a recipe, you will want to toast them first to get rid of the raw flavor and bring out the good nutty flavor.

How to Make Ravioli with Asparagus

Making the brown butter sauce for ravioli

Making brown butter sauce for ravioli is very easy. If you have never made brown butter sauce you are in for a treat when you see how easy it is.

  1. Add the butter to a saucepan over medium heat.
  2. Allow the butter to melt then reduce heat to low.
  3. Continue cooking the melted butter until it starts to brown with foamy bits on top.

That is it! Very simple. Browning butter for a sauce adds a nutty flavor to the recipe which is perfect when serving a heavy dish like cheese ravioli.

Toast walnuts

  1. Add your walnuts to a medium saute pan over medium heat.
  2. Let the walnuts heat up for a few minutes and begin moving them around to evenly toast on all sides.
  3. Once you begin to really smell the walnuts and they start to turn a nice golden brown they are done.
  4. Remove them from the pan onto a plate and let them cool.

Mix together cheese ravioli and asparagus

Once all of the parts are cooked up, you are just tossing together the cheese ravioli and asparagus into the browned butter until coated. Right before serving, add the toasted walnuts.

This ravioli recipe couldn't be more delicious and simple for your next weeknight meal. Really this can be made even as a special meal on weekends or even for guests.

If you want to add even more flavor to this browned butter ravioli, you can make a simple balsamic reduction to drizzle over the top.

Cheese Ravioli and Asparagus With Browned Butter

Ingredients

  • 1 large bag of frozen large cheese ravioli
  • 1 bundle of asparagus
  • 1 cup of toasted walnuts
  • ½ stick of butter
  • Parmesan cheese grated about ¼ cup or to taste
  • 4 tablespoon olive oil

Instructions

  • Fill a large pasta pot with water and bring to a boil.
  • While you are waiting for the water to boil, clean your asparagus and trim off the thick rubbery ends and discard.
  • Now, fill a large saute pan with water, add your asparagus and bring to a boil. You want to blanch your asparagus. Boil your asparagus for 3-4 minutes then drain and rinse under cold water to stop the cooking and then set aside.
  • In the same saute pan, dry it out then over medium heat add your walnuts and lightly toast them for about 4 minutes turning frequently.
  • Remove the walnuts from the saute pan and set aside.
  • Now add your stick of butter to the saute pan which is still very hot and let it melt over medium heat. Once the butter is melted let it continue to cook on low heat until it starts to get foamy and turn a light brown color (about 5 minutes) then turn the heat to lowest setting and add your asparagus into the pan to warm.
  • Once your pasta water comes to a boil add your ravioli and stir well but gently so they do not stick to each other. Cook your ravioli according to the instructions on the package, about 4 minutes.
  • When cooked, drain the ravioli and add it to your saute pan with the butter and asparagus. Add your olive oil and toss well. Now add in your walnuts and gently toss it all together. Season with salt and pepper to taste.
  • Plate your ravioli in individual dishes and top with a good sprinkling of Parmesan and enjoy!!
