Roasted green beans with rojo chimichurri is such an amazing way to make green beans that are usually (to me) quite bland! This dish idea came from my laziness of not wanting to create another spice blend for my green beans on a day that I already made a chimichurri sauce for some meat I was grilling (steak tips with rojo chimichurri). Well, these green beans came out amazing and I was so glad that I was lazy that day 🙂 These are super easy and well worth making because of all their flavor!
