Grilled Indian Plum and Cardamom Pork Chops

 

Today I created a new dish which I am calling Indian Plum and Cardamom pork chops.  It is delicious!!!  Usually when you see Indian food, the meat is cooked either in a tandoori with a paste on it or in a sauce that has lots of spices infused throughout.  I wanted to have a grilled pork chop with some of these same flavors found in Indian food but without it being in a heavy sauce.  This dish marries the flavors of garlic and cardamom (traditional in Indian cooking) along with the sweet plum and cardamom preserves (which remind me of the sweet chutneys served at Indian restaurants).  The combination of sweet and savory is delicious and the preserves from Thornburg and Company make an instant glaze of sweetness and add that caramelization to the pork.  If you are tired of eating the same old pork chop recipes and want something new to try that tastes great, then this is the recipe for you!
